Sherry Wine Vinaigrette

This vinaigrette becomes more flavorful over time. 
Store it in the refrigerator, however it should be served at room temperature.

Great over garden greens with Serrano ham and toasted Marcona Almonds.



 Ingredients

  • 3/4 cup Spanish Olive Oil
  • 1/4 cup Sherry Wine Vinegar
  • 1 medium shallot, minced
  • 1/2 to 1 Tbs fresh basil, minced
  • 1 small garlic clove, minced (optional)
  • Salt and freshly ground black pepper to taste

Preparation

Mix all ingredients together and let sit overnight.


The two most important ingredients for any vinaigrette are the olive oil and the vinegar. 

Experiment by adding additional herbs to your vinaigrettes depending on the other ingredients in your salads. Be creative!  Always remember that the optimal ratio of oil to vinegar is 3 to 1.
