Jamon Serrano - Spanish Cured Ham
Jamon serrano which translates to "mountain ham" is a traditional
Spanish product made from the hind legs of white-skinned pigs.
The legs are rubbed with a combination of sea salt and curing salts
which act as a stabilizer and dehydrator of the meat.
Historically after rubbing, the hams were aged outside and cured in
the mountain air. Today, the legs are hung in curing rooms
which combine the right temperature, humidity and air to process the
meat and obtain the same results as the traditional method of
curing. Redondo Iglesias has developed a method of
changing air characteristics to emulate the rotation of seasons,
thus reproducing the outdoor air curing process as closely as
possible. The hams are aged for a minimum of 12 months
allowing a deep development of the flavor.
Serrano ham is one of the products of Spain where guidelines to
guarantee quality are applied. Jamon Serrano is protected as
Traditional Specialty Guaranteed (T.S.G.) and producers of this fine
ham are expected to follow production standards established by the
European authorities.
The flavor of Serrano ham is unlike anything else. It is
not smoked and is a very light, lean meat. It has a sweet,
earthly flavor and is less salty than prosciutto. It's texture is a
bit dryer and smoother an prosciutto also .
