Sherry Vinegar
This vinegar is made from first pressed
Jerez and Pedro Ximenez sherry wines. It is 100% natural with no
preservatives or chemical additives. . Its processing parallels the aging
system as for sherry known as the “Criadera and Solera” method where
different vintages of the wine/vinegar are aged and blended in oak barrels.
During bottling, the oldest product is drawn from the “Solera” or the
barrels forming the base of the pyramid stacked barrels. The original
stock of wine used in the production of this vinegar dates back 50 years.
This prolonged aging in American oak barrels produces mature, complex
vinegar with incomparable elegant flavor and aroma, deep color and rich
nutty style.
