This sherry wine vinegar carries the Denomination of Origin “Jerez de la Frontera, guaranteeing the quality of the ingredients and production method.  Its processing parallels the aging system as for sherry known as the “Criadera and Solera” method where different vintages of the wine/vinegar are aged and blended in oak barrels.  During bottling, the oldest product is drawn from the “Solera” or the barrels forming the base of the pyramid stacked barrels.  The base stock of wine used in the production of this sherry dates back to 1970.
