Augusti Torello Mata Cava Vinegar

Cava is the Spanish word for sparkling wine, or champagne. This cava vinegar is made from sparkling wine from the region of Catalonia.  It is first fermented in American oak barrels for 5 months, and then French oak barrels for an additional year. It is a perfect complement to your delicate sauces and any foods that will benefit from its low acidity level.  Aged in American oak, then French oak to make the acetic tones more pronounced, the process also develops the smooth fruit aromas.
