Augusti Torelló Mata White Balsamic Vinegar
This award winning vinegar is from the Augusti Torello, the best known
family owned producer of cava, the sparkling wine of Spain. Made from the
Spanish Macabeo grapes, the cava is acidified naturally into vinegar for
approximately 18 months. It is then augmented with grape juice and let to
age in old French oak barrels for another year. Because the must of the
grapes is not caramelized, like most traditional balsamic style vinegars,
the resulting color remains clear and light. The result is vinegar with
fruity overtones, acidic notes and complexity that make it a perfect
complement to both sweet and savory dishes.
