Nunez de Prado
Family Estates
The Nunez de Prado family has been
producing olive oil since 1795 in the region of Andalusia in southern
Spain. They carefully produce oils from the Denomination de Origin of Baena.
The care begins with the organic methods used to grow and maintain the olive
trees. The fruit is carefully selected, based on its level of ripeness,
then picked by hand. The olives are stone milled the same day. The “flower
of the oil” is collected, as the olives release small amounts of oil due to
their own weight, before going to the traditional cold pressing. Where 5
kilos of olives will yield 1 liter of oil from the first press, 11 kilos of
olives are needed to yield 1 liter of Flor de Aceite.
Nunez de Prado oil currently being sold
is the most recent harvest, which arrived in the United States in May. Sr. Paco Nunez de Prado has stated that he feels each Nunez harvest really
comes into it's own one year after bottling so this oil is currently at it's
prime! When the oil is stored without UV exposure, it can last up to 3
years without degradation in quality.
