White Anchovies - Spanish Boquerones
Careful attention and strict quality control are maintained throughout the
production of these unique anchovies. The fish are caught in the famous
cold clear waters of the Bay of Biscay. Once the fish are cleaned, they are
cured in small batches in white wine vinegar that naturally bleaches them to their
white color. No chemicals or bleaching agents are used. When the
marinating process is complete, they are packaged in oil with garlic and
parsley.

Boquerones are another example of Spain’s ability to preserve seafood, using
