Cod, called Bacalao, is Spain's most popular "everyday" fish and is the most
commonly eaten fish in Spain. Strangely enough, this fish is not
caught off the shores of Spain. It was originally fished off the Gulf of St.
Lawrence and brought back to Spain in salt. The dish gained popularity
when the Catholic Church traditions included Friday fasting, and the balance
of salt and fish has rendered Bacalao a favorite ever since.
Sold like meat, there are many cuts that can be purchased. You can buy
loin, strips and the cheaper and thinner tail ends. Our cut is a
luscious center cut that is dried and salted naturally. It is totally
without preservatives and colorings to provide you with a healthy and
delicious dish. Bacalao is
