Tetilla Cheese

The work "tetilla" means nipple and defines the traditional shape of this
mild, cow's milk cheese. It can be recognized by it's flattened, pear
shaped cone with a small nipple on top, and it's smooth, fine, pale yellow
rind.
Tetilla cheese is made from whole cow's milk traditionally from the rubia
gallega cow breed which produces a small amount of milk which is of superb
quality. Cow's milk cheese is less common in Spain than those made
from sheep's or goat's milk since cow's are pickier eaters than either sheep
or goats. However, the green hills in Galicia where most of tetilla
cheese is made, has a climate that promotes the highest production of milk
in Spain.
This smooth, soft cheese has a milky and buttery flavor. It is
slightly sharp and mildly salted and perfect for daily consumption. It
is delicious eaten by itself, with crackers, dried fruit, or with
quince paste on bread. It is also great for cooking and melts easily.
